Summer time is almost over, which means school is starting. Dinner time is going to need to be fast and filling, because no one has time to stand in the kitchen for 3 hours to cook dinner. My 3 year old literally ate 3 bowls of this chili and wanted more. I love cooking, but it needs to be fast and yummy. I have found a new love for the crockpot, I mean who wouldn’t want someone to do all your cooking for you? This chicken chili is amazing, it is my husbands favorite.
4 chicken tenders
1 cup of chicken broth
1 can rinsed and drained black beans
1 can rinsed and drained corn
1 cup of On the Border Mild salsa
1 package of taco seasoning
4 oz cream cheese
1/2 cup sour cream(optional)
1/2 cup shredded mozzarella cheese(optional)
1.Place frozen chicken in crock pot. Pour broth,beans,corn,salsa,taco seasoning on top.
2.Cook on low for 6 hours (or high for 3)
3. Remove chicken and shred.Re-add chicken to crock pot
4. Add 4 ounces of cream cheese til melted.
5. Serve with sour cream,mozzarella cheese, tortilla chips and avocado slices.
